Toss diced onion, celery, carrots, garlic, canned diced tomatoes, tomato sauce, broth, beans, oregano, basil and a bit of salt and pepper into your slow cooker along with some already cooked beef. Let the combination cook on low for about 6-8 hours. In the last 20 minutes, stir in pasta shells. Serve with grated Parmesan cheese.
Couscous Meatball Soup
Make your meatballs first and make sure they’re brown. Then, in a Dutch oven, combine collard greens, kale, stock, vinegar, pepper flakes and pepper. Add the meatballs, let simmer for 10 minutes, then add the couscous and let it turn tender.
